      目的 综述生物基可降解包装材料在果蔬类食品保鲜中的研究进展,为解决传统包装材料难以降解、环境污染的问题,提升果蔬保鲜效果,以及推进果蔬贮藏保鲜技术研究工作的开展提供思路和方法。方法 通过检索国内外相关文献,对蛋白质、多糖、脂质这3类常见的生物基可降解包装材料的特点进行归纳和总结,重点阐述了近年来学术界对其复合性能及其在鲜切果蔬、未加工果蔬应用中的研究进展及工业化前景。结果 生物基可降解包装材料具有极高的经济和环境价值,能较好地维持果蔬产品的新鲜度、延长果蔬贮藏期。结论 这些研究不仅为生物基可降解包装材料的进一步开发提供了理论支撑,还为未来果蔬保鲜加工与生产指明了方向,展现出广阔的工业化应用前景,可更好地满足人们对果蔬包装的需求。
英文摘要:
      The work aims to review the research progress of bio-based degradable packaging materials in the preservation of fruits and vegetables, so as to provide ideas and methods for solving the problems of the traditional packaging materials that are difficult to degrade and environmentally polluted, enhancing the effect of preservation of fruits and vegetables, and promoting the research on the storage and preservation technology of fruits and vegetables. The characteristics of three common types of bio-based degradable packaging materials, namely protein, polysaccharide and lipid, were summarized and concluded by searching relevant literature in China and abroad. The research progress and industrialization prospect of composite properties and application of such materials in fresh-cut fruits and vegetables and unprocessed fruits and vegetables in recent years were also discussed. Bio-based degradable packaging materials had high economic and environmental value, which could better maintain the freshness of fruit and vegetable products and extend the storage period. These studies not only provide theoretical support for the further development of bio-based degradable packaging materials, but also point out the direction for the future processing and production of fruits and vegetables, showing a broad prospect of industrial application, so as to better meet people 's needs for fruit and vegetable packaging.
